Chef Ashwin Singh introduces FITOUR, a chef-led culinary speakeasy in Bandra West, where food, theatre, sound, light and design come together as one evolving experience.
FITOUR, a 14-seat dining experience by Chef Ashwin Singh, is built around a simple idea: some stories are better experienced than explained.
FITOUR is fueled by Chef Ashwin’s intimate connection with food, a journey that began in his family kitchen in Meerut, watching his mother cook. At seven, he knew he wanted to become a chef and came up with the name FITOUR. He began working in kitchens at fifteen, learning through experience, curiosity and the people around him, before going on to work across kitchens that shaped him: including Taj, Marriott, JW Marriott Kolkata, Gaggan, and Masque.
Through a thoughtful tasting menu, FITOUR brings these milestones together. The experience is deeply rooted in Indian flavors without being confined to a single region. Here, global techniques don't mask the cuisine’s heritage; instead, they serve as a lens to reinterpret memories, places, and ingredients from Ashwin's life. At FITOUR, the meal is designed as a multi-sensory journey, with every course creating a shift in mood through lighting, sound, flavours, aromas, visuals and touch. Rather than following a conventional tasting-menu format, the experience unfolds in chapters, allowing the narrative to move between memory, place and imagination.
